Cookie Hater

Its true, I'm not a huge fan of cookies. Or cake for that matter. Hard crumbly cookies and dry cake slathered in buttercream, yuck. However, I could eat sweet breads and ice cream all day long. Anyways, Mom Millar gave us some yummy gourmet baking ingredients (including the mint chocolate chips and the gourmet dark cocao) for Christmas, so I had to try some out. The result: pretty tasty cookies. I'm pretty ok with these! Some Variation of an Andes Mint Cookie

1 cup butter, softened 1 cup brown sugar 3/4 cup white sugar 2 eggs 3 cups all-purpose flour 3/4 teaspoon baking soda 1/2 teaspoon salt 2 Tablespoons dark cocoa 3 cups mint chocolate chips Preheat oven to 350 degrees F. Cream the butter and the sugars, then beat in the eggs. Add the flour, baking soda and salt, and mix in the chocolate chips using a wooden spoon. Drop by teaspoonfuls onto a greased cookie sheet. Bake 8 to 10 minutes--no more! Even if they look doughy! Cool for 5 min. on the pan.
